Love zucchini bread but don’t have time to bake? This protein-rich smoothie, inspired by this classic cinnamon-spiced summertime sweet bread favorite, is quick and easy to whip up.

Ingredients
1 cup of unsweetened milk: Fat Free Dairy or Lactose & Fat-free Ultrafiltered Dairy or Soy Milk or Pea Protein Milk
1 tbsp. pumpkin seed protein powder
½ medium banana (frozen)
½ cup zucchini, skin on, sliced or shredded (frozen)
1 tbsp. old fashioned oats
¼ tsp. cinnamon or pumpkin pie spice
2 tsp. grated lemon rind or lemon juice
½ tsp. vanilla extract
1 packet (1 tsp.) zero calorie sugar substitute (optional)
Directions
Pour milk into a blender.
Add Protein Powder.
Add remaining ingredients.
Blend on high speed until smooth — about 1 minute.

Recipe Note
- Buying and using frozen zucchini pieces adds convenience, helps reduce waste, eliminates the need to add ice to your smoothie, and helps make a smooth consistency.
- Pre-measure the zucchini, peel and cut banana pieces, put them in small storage bags or other containers ahead of time, and store in the freezer so when you’re ready to make a smoothie the ingredients are ready to go.
- If you’re looking for another way to use up zucchini from your garden, chop some up, freeze it, and enjoy it in smoothies all year long!
- If you use a non-dairy milk alternative, choose a product fortified with calcium and vitamins A, D, and B12.
